Sesame oil is often used to fry meats and vegetables or to add to clothing and meats. Sesame oil is believed to have some significant health benefits such as providing healthy fats to the heart, combating inflammation and protecting the skin from sun damage. Coconut oil is extracted from the kernel of a mature coconut, which is harvested from the coconut palm and is high in saturated fat. Recently, it has been shown that replacing 75% of high PUFA vegetable oils in the poultry diet with coconut oil is associated with lower fat deposition and increased lipoprotein lipase, liver lipase and total lipase activity, thus positively affecting the lipid profile. In pigs, replacing a standard diet with coconut oil modifies adipose tissue genetic expression and fatty acid composition, with minimal effect on serum lipid profiles. Interestingly, in stress-induced wound mice, coconut oil has recently been shown to improve lipid profiles and restore antioxidant pressure.
